Banana-Zucchini Bread

My Mom gave us a bunch of zucchini and squash from her garden. Now I'm trying to find good receipies to use it all up. Here is a great one I found on allrecipies.com:


3 eggs
3/4 cup vegetable oil
2/3 cup packed brown sugar
1 cup white sugar
1 cup grated zucchini
2 bananas, mashed
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup dried cranberries
1/2 cup chopped walnuts


DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch bread loaf pans.
In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans.


Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving.

It's begining to look a lot like ChRiStMaS!

I really just LOVE Christmas and am having a lot of fun so far! This is our 2nd Christmas being married and our first time putting up a tree! Grandma Rolfson said she will no longer be using hers, so he offered to give it to us! On Friday night we got to decorate it! I love having it up! Thank you SO MUCH Grandma!!


Also, I have begun doing some BAKING!! This fudge is the EASIEST recipe and SO tasty!

Rocky Road Minute Fudge
3 Cups Chocolate Chips
1 14oz can Sweetened Condensed Milk (NOT Evaporated milk)
1 teaspoon vanilla extract
1 Cup Marshmallows
1 Cup broken nuts (walnuts, pecans, hazelnuts)
  1. Place choc chips and Sweetened Cond. milk in a 1 qt. microwave safe bowl.
  2. Microwave 2 minutes on 50% power
  3. Stir and return to oven for 30 seconds more. Checking and stirring every 10 seconds until smooth.
  4. Stir in Vanilla, Marshmallows, and nuts
  5. Pour into 8-9" foil lined square pan. Chill for 1 hour
  6. Cut into pieces and wrap to preserve freshness
Today in Calgary, the snow came POURING down all day, so it now if feels even more like Christmas. One thing I like about Winter is that while the weather is cold and the roads are icy (like today) we get to stay inside, curl up under a blanket, and be cozy...and maybe eat some fudge!
